Wouldn’t it be wonderful if the weekday meal was pipping-hot-ready when you got home? So all you needed to do was fix a side salad and a refreshing drink for dinner to be ready. I would LOVE that! But long days in the office don’t exactly warrant for that to happen. I’m usually rushing home to fix a less than satisfying meal or running out to grab something to eat so that I’m not eating dinner at 8pm.

But then I thought, “what if casseroles were prepped on Sunday, packed in the freezer or fridge, and ready for someone to pop in the oven right when they come home”. Pipping-hot healthy casseroles quickly ready to eat.
