3-Ingredient Paleo Pancakes

These 3-Ingredient Paleo Pancakes were actually very tasty. A little more like banana bread but very light in nature. The cinnamon was a really nice touch in this recipe, too. I will definitely be making these time and time again. Can’t wait to get creative with the toppings.

3-Ingredient Paleo Pancakes

Ingredients

  • 2 Ripe bananas
  • 1 egg
  • 1-2 Tablespoons Almond Butter
  • 1 tsp vanilla extract (optional)
  • 1 tsp cinnamon (optional)

Instructions

  1. Mash the bananas in the bowl. Add the egg and almond butter. Mix.
  2. Add vanilla extract and cinnamon at this time, if you choose.
  3. Heat skillet to medium-high. Spray with olive oil or use coconut oil.
  4. Drop 1/4 cup batter per pancake.
  5. Wait til bottoms are golden brown.
  6. Flip.
  7. Cook a few more minutes.
  8. Serve up. And top with fresh fruit and a dab of coconut butter.

Notes

*TIP: these pancakes are delicate. It helped to work with a hot skillet on medium-high heat to flip the pancakes. And they do take a few more minutes to cook than normal pancakes.
