It was one of those days, where comfort food was on the top of my thoughts. I just wanted to get off work and devour something that made all my problems go away.
While the typical comfort food usually means carb-loading, I didn’t want to be left feeling like lead at the end of my meal. I cherish the quiet times of my evening. And going to bed from being stuffed wasn’t what I had in mind.
So I dug deep in my thoughts and that’s when the memory of my childhood favorite came to mind, chicken adobo. I love the flavor combination of soy sauce and vinegar. And I had everything to make it right when I got home. The best part, its easy to make. Pour it over white rice. Pair it with a salad. Life is good.
- Heat oil in pan. Please chicken, skin side down. Brown for a few minutes. Add garlic. Brown for 2 more minutes.Add the vinegar, soy sauce, bay leaves and peppercorns. Bring to a boil, then lower heat. Cover and let simmer for 30 minutes, flipping chicken once or twice. Uncover and simmer until sauce is reduced and thickened, and chicken is tender, about 10-15 more minutes. Serve with steamed rice. Pair with a nice salad.
I love pouring lots of sauce over my chicken and rice! Mmmmm….
