Kale Chips & Quinoa Patties

Sorry you guys! I was told that aside from the link I provided, I didn’t point you to where the new Recipe Finder page was! On the navigation menu, its under Kitchen > Recipe Finder.


Well… I had to do something with the Lemon Curry Quinoa leftovers! No way was I going to let that go to waste. But what? Then it came to mind.

So I decided to make Lemon Curry Quinoa Patties topped with a dill-spiced Chobani (plain) yogurt, side of mashed potatoes (bcuz today’s workout left me hungry!), and a Large side of Parmesan Kale chips (ya, I kinda ate them all).

I am telling you, I am on fire with my foodie intuition skills this week. Maybe its what you called Intuitive Eating? My body says, “I want this” and I say, “Okay!” ;) You would do the same right? I mean this week’s meals have been wheat berries salad with an orange vinaigrette and a chicken salad topped with this delicious quinoa. Yum. And my tummy is very  happy!

Don’t you LOVE this Kale Heart? My daughter discovered it when I was taking it out of the bag. Heart Healthy Kale. ♥

I wish I could say that I created this recipe myself, but I did not because the evening was already late… and I was hungry! I made the kale chip recipe from katheats and the quinoa patties recipe from epicurious.

A Whole tray of Oh my Goodness greens. See that can of Pam Olive Oil in the background? It is awesome and now my new best friend in the kitchen! It allows you to coat all the greens with a nice think layer of Olive Oil.  Popped these in the oven after some EVOO, Parmesan and salt sprinkling.

Came out just right. Don’t they look yummy? delicious? awesome?

And the best part of the night – my 17-year-old son who has never tried kale says, “These are good. Are they good for you? You should make them more often.” Bless that child. Its what ever mother wants to hear. ;)

  1. I love kale chips. I’ve been craving them and have made a batch pretty much at least once a week for the past couple of weeks. I literally can sit down and eat an entire head of kale in one sitting. But it’s good for me, right? ;-)

    • the first time i tried them, i wasn’t really keen on them. maybe i didn’t cook them long enough. but last night – and with the addition of parmesan cheese – it was the bomb! i’d love to try a cayenne version of them with some nutritional yeast. that outta be good. And its good for us. we can eat the WHOLE thing and not feel guilty. ;)

    • thanks, Gina. And your quinoa cake recipe… i am saving for another day. because my quinoa already had lemon and I wasn’t sure about the curry flavor with capers (capers are my absolute fave ingredient!).
