WIAW: Clean Eating

Darn it! I am determined to Rock my Abs by Summer! That means, LOTS of CLEAN EATING on my plate for the next 6-8 weeks.

Let’s get to the eats

Early Breakfast: Cinnamon-Raisin Yoatz topped with Blackberries (my mom brought a ton of fruit during Easter. I am enjoying all the leftovers).

MidMorning Breakfast: Oatmeal, Cottage Cheese, Berries, and granola. Doesn’t it look SO yummy? It really is.

Pre-lunch Workout (not shown – but trust me, it kicked butt – it was Shoulders/Back day)

Post-workout Lunch: Fiesta bowl with whole pinto beans, pork, cilantro, onion, lettuce and salsa. (tortilla shell not eaten). I know pork is not the leanest meat, but the chicken just didn’t look that good.

Snack: Vega Chocolate Performance Protein (not shown)

Dinner (Monday night): I had to share. Putting lemon curry quinoa on this green salad made it 100% tastier! Okay, maybe not 100%, but it was really delicious when combined with the chicken and dried cranberries and carrots. I received the lemon curry quinoa as a sample from ExpoWest –  Naturals Product Expo and decided it was a perfect night to cook it up. Boy! I love when my intuition is right on in regards to food combos.  This brand of Quinoa is from American Roland Food Co. Mmm – mmm.

Dinner (Tuesday Night): Last night, I tweeted what I wanted to make for dinner. And man, my food intuition was right on again! This is Wheat Berries Salad with edamame, walnuts, green onions, dried cranberries, leftover chicken (from last night’s dinner), and an gorgeous Orange Vinaigrette.

Tasting the vinaigrette by itself was potent due to the vinegar I added. But mixed in the salad – perfecto! I devoured dinner.

Where did I get the recipe? From the Recipe Finder page I recently created. It includes the sites - Oatmealinmybowl.com, TastyKitchen.com, SimplyRecipes.com and MyRecipes.com. Is there any other sites I should add to it?

I used the Orange Vinaigrette recipe from the MyRecipes site.

I am totally enjoying getting creative in the kitchen again. ;)

  8. The edamame and wheatberries dish looks tasty, I’d leave out the chicken cause I’m a veggie, but otherwise a great idea!

  10. I love throwing edamame into a salad…I’ve never heard of orange vinaigrette dressing but it sounds delicious!

  14. That cottage cheese concoction does look tasty! I’ll have to try that. I usually just put tomatoes and avocado in mine. I never thought of going sweet. Looks like you’re well on your way to rocking those abs with your awesome diet!

  17. i had edamame in my dinner last night too!! i was finishing up the edamame left over from the bean salad i made on easter. it was so good! and you’re right, your mid-morning cottage cheese snack does taste amazing, i have mine every afternoon! such a go-to.
    at mex restaurants i tend to go for pork instead of chicken too. they just make it WAY better! and if you eat what you like, you’ll be satisfied, so more power to you :)
