WIAW: Running, Planking, and Über Deliciousness

DELICIOUS EATS

mango-banana soft serve

Breakfast

This morning I got the inkling to make some Mango-Banana Soft Serve for breakfast. Change things up. I felt I needed to add a little substance. So, I topped it with some Love Grown Foods Raisin Almond Crunch Granola. Nom Nom.

Mango-Banana Soft Serve
Handful of frozen mango + 1/2 frozen banana + dash of vanilla extract.

Note: if you are using a blender (as opposed to a Vitamix) add a little bit of H2O or mylk to make soft serve blendable.

soy mocha

And a soy mocha when I arrived to work. It was calling my name.

Lunch

run at lunch

Got my afternoon run in. Was afraid the run wasn’t gonna be a good one because I didn’t really eat much. Just didn’t feel like it. But I had a good run with an average pace at 5.4mph.

Sprinted the last minute with a 6.5 mph because I really wanted to pull past the 2 mile mark and get on with my plank. I planked for 1.15 minutes.

lunch for salad

Then refueled with a mixed salad with tuna, lots of watermelon, all topped with a turkey patty.

Still keeping it light. Do you have those days when you just want to eat light?

After-work Snack

wasabi peas for snack

When I got home I was off to prep dinner. But in the meantime, needed something to keep me satisfied.

Maybe I’m just addicted to these spicy little wasabi peas.

Dinner & Nighttime Snack

prepping the salad

I was making this salad. But I substituted a few things. Bulgur with Wheatberries. Cilantro with Basil. Pine Nuts with a mixture of Walnut & Smoked Almonds.

Because that’s what I had on hand. I think I substituted just about everything. LOL. It turned out delish.

The aroma of cumin, coriander, garlic and cinnamon wafting through my house was delightful!

salmon with wheatberry salad

Served with Salmon.

Do wheatberries resemble Scarab beetles to you, like they do me? Sorry hope I didn’t ruin it. But I always think that.

Nighttime Snack

nighttime snack

Wheat toast topped with Chocolate PB, bananas, chopped almonds, sprinkled with cinnamon, and drizzled Xagave.

xagave

I love Xagave.

Its not sweet like sugar and balanced. To me, its the best ‘sweetner’ on the market. And it can be used in a 1-on-1 ratio to sugar.

Was so good drizzled on this snack…

citrus tea

And a teaspoon in my Citrus Herbal tea.

Which I am sipping right now as I write this post.

  19. I actually did not get my workout on today though I do see some yoga in my future. But I’m okay with this because my body needed a rest day and when I was debating the rest day vs pushing through a workout, I ultimately decided rest was what I needed most.
