Breakfast

I was in a rush to get to work because I slept terribly last night. So for breakfast I fixed a quick bowl of Coach’s Oats topped with blueberries, chopped walnuts and almond milk. I really wanted to add cinnamon, but I was just trying to chomp it down without burning my mouth and get on the road. Trust me, Coach’s Oats are the best Oats out there. Ask my daughter – the finicky eater totally agrees!
Lunch

I worked out during lunch. That means it was only natural to head over to a place called Something Healthy. The menu totally caters to veganism. I had my favorite Vegan walnut “chicken” orange wrap. Nom Nom! And a green tea iced tea to drink. Of course, they forgot my apple again (I think they are purposely doing it to me – LOL).
Snack

The Vega Whole Food Health Optimizer could actually work as a meal replacement. It’s full of tons of nutrients that your body loves. This one is in Berry Flavor. I drank 1/2 of it and then took a quick walk to stretch my legs.
Dinner

I may have forgot the Daiya cheese, but this black bean & corn tostada topped with a Creamy Avocado-Chipotle Sauce was the bomb!

I love Tuesday Taco nights at our house. And frequently post my vegetarian or vegan tostada pictures on my Instagram profile.

Most of the time I top my tostadas with a squeeze of lime and chunky salsa. Tonight this Creamy Avocado-Chipotle Sauce jazzed up the tostada.

Because of my recently discovered egg white allergy, a LOT of the foods that I used to enjoy had to be made vegan! Mostly baked goods, where I have to sub in a flax egg

I love that you add blueberries to your oats in the morning. I do the same thing with my Kellogg’s FiberPlus cereal – such a great way to boost your fruit intake.
Sometimes I do feast on my Kashi Go Lean cereal. It’s pretty tasty too.

I don’t eat many vegan dishes at home so I don’t make any fave dishes vegan but I have tried vegan spins on dishes I enjoy at restaurants. For example I had tempeh “crabcakes” and they were AMAZING!

I could eat Mexican all the time. I especially enjoy the margaritas.
I still have a bunch of the sauce left. I can’t use it in a green smoothie because of the chipotle. I need to think of what else I can use it with!

You know how I feel about avocados. And cilantro. I’m convinced this sauce and I were meant to be together. I’m making immediatley and eating it with everything. And I mean everything!

I have never consciously made vegan dishes, but any way to make meals healthier is a plus. Love the eats! Do you like Health Optimizer??
I actually do like it. Same with their protein powder in chocolate. Which I didn’t like at first but now… I am totally addicted to it. Just a little pricey. But you do get a good quality product.
